Recipe: Chicken Enchiladas

If your family loves chicken as much as my family does, here's a good recipe that will make them come back for more! Another recipe with lots of chicken! It’s easy, affordable and down right yummy!!! Don’t be afraid to modify it either.  I've changed it up a bit and added lemon pepper, salt and garlic powder.  It really gave it a different taste that everyone loved!!

Recipe Modified from Kentucky Kitchens Volume 1: Favorite Recipes of Telephone Pioneers

Ingredients:
1 package flour tortillas
1 can diced green chilies
1 pint sour cream
1 lb shredded cheese
3 lbs chicken breast
1-2 cans cream of chicken

Directions:
Boil chicken breast until tender.  Mix chicken soup, chilies, sour cream, half of shredded cheese and chicken.  Scoop out mixture on tortilla and roll up and place them on a greased cookie sheet. Put remaining cheese on top of rolled up tortillas.  Bake at 350 degrees for 15-20 minutes or until golden brown.
